The Bourbon Coffee Group has consistently established itself as the go-to Brazilian specialty coffee producer with a collection of estates where focus on farm management and processing is unmatched. In 2016, Bourbon Coffee took over management of the Dias Family estate called Fazenda Cachoeira da Grama, located in the municipality of São Sebastião da Grama within the state of São Paulo. Much of the 1000 acre estate is preserved land, with just over 200 acres in use for coffee production. Bourbon Coffee inherited much of the estate’s design from the visionary work of Lindolpho de Carvalho Dias and his son Gabriel de Carvalho Dias. Special attention has been placed on planting native tree species to maintain an ecological balance on the estate. The estate is also equipped with housing, a school, and soccer field so employees feel at home. For Bourbon Coffee, the state-of-the-Art processing facility has become a place to learn and showcase post-harvest processing technology aimed at improving coffee quality. For this Cachoeira da Grama pulped natural process, cherries are floated to remove less dense and damaged coffee, cherry is depulped and moved immediately to dry on raised beds that are covered to protect the coffee from the region’s humidity.
