Processing Details This lot comes from 12 producers (Fabio Zambrano, Wilson Jesús López Carlosama, Wilson Ramon Joven, Héctor Duván Hernández, Bolney Reinoso Osorio, Edgar Martínez Duque, Yobany Hernández Joven, Jonh Fernando Pinzón Santamaria, Eliseo Peña Peña, Edinson Ramírez López, Arcenio Muñoz Morales, and Jairo Quiñones Quinayas) with small farms in communities within the municipality of Pitalito in the department of Huila.
Each producer has their own micro-mill where they carefully harvest cherries, macerate the cherries overnight, then depulp, ferment between 12-24 hours, wash and gently dry the parchment on raised beds between 7 to 15 days.
