Chinacla has some of the best coffee farms in the Marcala growing region. This particular lot is sourced from Las Marinas, a 33 acre farm located in the municipality of Chinacla within the department of La Paz, Honduras. Allan Ricardo Cobos Zelaya is the fourth generation of his family to manage his own coffee farm. He does the work with a passion for conservation, maintaining 20 acres of the farm's total area to preserve natural forest.
Processing Details: Cherries are carefully harvested based on optimum ripeness and floated to remove damaged and underripe cherries.
Sorted cherries are then macerated for 48 hours, then depulped and fermented for 12 hours. Next the coffee is washed and then
placed on raised beds and dried over a period that ranges from 12 to 15 days. Exporting Details: Allan works with an export company called San Vicente.
One of the principal figures at San Vicente is Ben Paz, the third generation in his family to work at the family owned exporting company.
Ben has become well-known for his matchmaking skills, making relationships between some of the finest coffee producers in Honduras with roasters from around the globe.
The partnership has helped to improve quality, increase earnings from coffee sales, and strengthen producers’ livelihoods.
