Mt. Kenya, at the helm of Kenya’s Central Province, is the second tallest peak on the continent of Africa and a commanding natural presence. The mountain itself is a single point inside a vast and surreal thicket of ascending national forest and active game protection communities. The central counties of Kenya extend from the center of the national park, like six irregular pie slices, with their points meeting at the peak of the mountain. It is along the lower edge of these forests where, in wet, high elevation communities with mineral-rich soil (Mt. Kenya is a stratovolcano) many believe the best coffees in Kenya, often the world, are crafted.
Nyeri is perhaps the most well-known of these central counties. Kenya’s coffee is dominated by a cooperative system of production, whose members vote on representation, marketing and milling contracts for their coffee, as well as profit allocation. Othaya Farmers Cooperative Society, the umbrella organization that includes Gatugi Factory, is one of Kenya’s larger societies, with 19 different factories and more than 14,000 farmer members across the southern Nyeri region. The Gatugi Factory has 500 members actively harvesting and delivering to the processing center. The factory’s total cherry intake tends to hover around 323,000 kgs, meaning the average member of Gatugi is farming enough coffee fruit for roughly two 60kg bags of exportable green.
Othaya Farmer Cooperative Society is one of key member societies of the Kenya Cooperative Coffee Exporters (KCCE) organization. KCCE is an historic organization of almost 4,000 individual cooperatives. The group was formed in 2009, with the express goal of managing marketing and exporting operations cooperatively, as opposed to contractually with third parties. The economics of smallholder systems are consistently difficult everywhere in the world, and in Kenya in particular the number of individual margins sliced off an export price before payment reaches the actual farms is many, leaving only a small percentage to support coffee growth itself. And most often this arrives many months after harvest. KCCE, by managing more of the value chain itself, can capture a greater margin on behalf of the farms. The chairman of Mahiga Factory, another Othaya FCS member, happens to also be one of the founding directors of KCCE—so, the participation of Othaya FCS in farmer-forward infrastructure in Kenya is strong.
Kenya is of course known for some of the most meticulous at-scale processing that can be found anywhere in the world. Bright white parchment, nearly perfectly sorted by density and bulk conditioned at high elevations is the norm, and a matter of pride, even for generations of Kenyan processing managers who prefer drinking Kenya’s tea (abundantly farmed in nearby Muranga county) to its coffee. Ample water supply in the central growing regions has historically allowed factories to wash, and wash, and soak, and wash their coffees again entirely with fresh, cold river water.
Gatugi typically ferments for 27-35 hours depending on ambient conditions (the changing mountain climate, as for many processors, tends to dictate fermentation temperatures, and Mahiga staff are required to check fermentation progress every three hours). After fermentation, the parchment is rinsed and the water replenished, and the clean parchment soaks for an additional 12 hours, after which it is sorted by density and brought to the tables to dry, typically for two weeks. After drying is complete the coffee is stored on site and eventually delivered to the Othaya dry mill for grading and a final density sort. The established milling and sorting by grade, or bean size, is a longstanding tradition and positions Kenya coffees well for roasters, by tightly controlling the physical preparation and creating a diversity of profiles from a single processing batch.

Nyeri is a well-known Kenyan area and the region, like many in Kenya, is flush with cooperatives that organize, process and facilitate exporting for small holders. This washed coffee has roughly 25-37 hours of fermenting with check ins every three hours. Depending on how quickly the fermentation is coming along due to the elevation or other climatic factors will determine the length of time. After they determine the appropriate amount of fermentation, the coffee is removed and then cleaned with fresh water until it is left out to dry. Acid forward with flavors of fresh ginger, dry tomatoes; this classic take on a Kenyan coffee is hard to beat. On the table the whole team was excited to discuss this coffee and was easily a standout. I feel especially excited about this coffee in that it feels like the idyllic version of a Kenyan coffee. Yes, there is some savory notes but there is so much apple, tangerine, black tea an cola. Its creamy but not dense with bright fruit notes like mandarin gelato. We also got notes of tangy plum, orange soda, fresh ginger. A standout note from one of the cuppings is electric, and I’d have to agree with this note. Its just so good. It’s pretty rare to see screen sizes so condensed like this. These large beans are mostly in 19-18 range with 86% of the sample size in it. It’s so fun to see specs like this and they are a testament to the extra work that the team has put in during the sorting and exporting process. This lot is a mix of SL34, SL28, Ruiru 11 and Batian, a pretty standard mix for a Kenyan lot. SL 34 is a typica related genetic group according to genetic tests and was selected at Scott Labs in the 1930’s. It is known for its great cup quality and moderately high yields but susceptible to diseases and climate change. SL28 is a well-known cultivar in Africa and has a very good reputation for cup quality and resistance to drought. It does not fare well against major diseases in coffee but for the most part is durable and notable for its rusticity. The plant can be left alone for a few years but return to successful harvest production levels. Scott Agricultural Laboratories initially selected the cultivars and was a Laboratory that was established by the British government in Kenya in 1920’s. Ruiru 11 is a bit of a Frankenstein coffee with many progenitors to its genetics including K7, Timor Hybrid, Sudan Rume, N39, Sl28, SL34 and Bourbon. It was created in response to the coffee berry disease epidemic in 1968 and took 20 years to develop and release into the coffee sector of Kenya. This coffee was chosen because of its compactness and resistance to disease. Once finally released and cultivated, green buyers had a bad response to it due to its cup profile. Although specialty green buyers don’t love this crop, many farmers love it because of its resilience. It is difficult for the station in Kenya to produce adequate volumes of seed to meet the demand by farmers. Ruiru 11 relies on hand pollination for mass propagation, a slow and tedious process that limits production. Batian well-adapted for small holders due to its resistance to diseases and pests. Coffee research Station created this cultivar in Ruiru, Kenya. In 2010 is released to farmers, a late comer in the game. But it finds itself pretty popular due to its resistance, good cup quality and it being a tall plant which makes it easier for farmers to plant. It is a mix of three pure line varieties; Ruiru 11, SL4 and Timor Hybrid.Diedrich IR5 Analysis by Doris Garrido
This year, Kenya Gatugi is an absolute representation of Kenyan coffees- vibrant, tangy, and full of character. At first, I thought my roast had just nailed it perfectly, and maybe I had simply made the right choice. Now I’m sure the coffee is just well processed, which makes the roasting process a lot easier. Green grading showed medium to high density and average 10% moisture but behaved like high density coffee. It took me lot of energy to reach the color change, but the results are magnificent For this roast, I used an old Kenya profile from a similar coffee- or so I thought. But this coffee reacted differently, and I ended up with a totally different curve. I started the roast with a relatively high charge of 451F, adding all the gas I had in the roaster within the first 15 seconds. The energy for this roast built up over 4 minutes, then dropped to the lowest point with the burners still on. Around the middle of yellowing, I started full airflow, followed by dropping the burners as I approached the first crack and the coffee wanted to take off. Finally, the coffee cracked at 382F, and left it to develop for 1:40 minutes, finishing at 394F with a total roast time of 8:05 minutes. One thing I love about the Diedrich is that I can use its energy retention to my advantage -especially with coffees like this- making the roast a lot easier. First sip on the cupping table and this coffee tasted just amazing. I’m very proud of the results. The acidity was stunning -someone even called “electric.” It was clean and tangy, plum forward, with a distinctive dry tomato note on the finish. Caramelization ended up very balanced, bringing a great body and soft sweetness that worked beautifully with the acidity.Ikawa Pro V3 Analysis by Isabella Vitaliano
Our current Ikawa practice compares two sample roast profiles, originally designed for different densities of green coffee. The two roasts differ slightly in total length, charge temperature, and time spent between color change in first crack. You can learn more about the profiles here. On the high density profile of this coffee we got more savory notes like tomatillo, jalapeno, lemon zest and caramel. The light density roast was round with some zippy characteristics like pineapple. As it cooled it felt a little imbalanced. Both Doris and I preferred the high density roast of this coffee. Cheers! With our washed Kenyan offerings in the Crown Jewel program, you’ll typically find two types of profiles. One is a softer delicate profile that challenges your conception of what Kenyan coffees may be. Others, and this Gatugi falls squarely in this camp, champion a classic profile of in-your-face savory citrus and stone fruit. With such prominent acidity, we chose a flat bottom brewer to round out the profile. Our first profile uses a coarse grind and a slightly lower dose. This coffee is super soluble though and even with those parameters, you’ll get a fairly high TDS (1.46). With an extraction percentage of 21.09% We got flavors of tangerine, black forest cake, juicy red wine, sun gold tomato, and hibiscus. Our second brew went significantly coarser, but we brought the dose up slightly. This brought the TDS and extraction percentage down to a more “normal” level. The brew was a lot softer and sweeter, with more notes of cola, orange cream, and mandarin. If you’re looking for a more subtle brew, this is the way to go. Whichever profile calls to you, just keep in mind how soluble this coffee is. You’ll want to steer towards a coarser grind and lower dose to avoid a heavy muddled cup. We recommend a flat bottom brewer to balance all the acidity this coffee has, but it could also be fun to lean into it with a conical brewer.
