Marcala.
Farmers in this area typically cultivate coffee on just a few acres.
They work collectively under an organization called Sociedad Marcalina De Productores De Café (Marcafe), to pool their resources for farm management and post harvest processing improvements. Processing details During the harvest, each producer follows a strict protocol which includes picking cherries at optimum ripeness and
hand sorting.
Cherries are delivered to Marcafe’s centralized wet-mill designed to receive cherries from all of its members. The mill floats cherries using recycled water to remove less dense and damaged beans before depulping. After depulping, coffee is fermented and washed.
Washed parchment is pre-dried and rested for 12 hours and then placed on patios or mechanically dried.
