Here is an opportunity to support a newly formed organization of producers in the Sierra Madre de Chiapas, which includes the El Triunfo biosphere reserve.
Granos de Café el Quintal de Oro is an association that was formed in 2023 and has 62 producer members. At the core of the association is a brother and sister team (Adriana Gálvez Rodríguez and Amanda Gálvez Rodríguez) who started processing experiments at their fathers 7 acre farm.
Once perfected, they began to ask their neighbors to follow the same processing protocols.
The result is a deliciously consistent regional blend that serves as a protective buffer for one of nature's most diverse biospheres with more than 800 plant species and 390 bird species. Processing Details:
Each producer cultivates coffee with organic practices on farms that average just a few acres in size, small enough to process their own coffee with their own micro-mill.
During the harvest, each producer follows a strict protocol that starts with selective picking with focus on fully ripened cherries.
The cherries are washed and floated to remove damaged and less dense coffee, and then macerated in airtight containers for up to 48 hours.
The selected cherries are then depulped, fermented, washed and gently dried and stored until it is time to prepare the coffee for export.
