Processing Details In addition to implementing the renovations that have taken Santa Anita to a new level, the Ruiz brothers also have all of the tools to manage the entire post harvest details. Cherries meticulously selected based on ripeness are transported to the Santa Anita mill where they are sorted, depulped, fermented, washed and mechanically dried. Santa Anita also evaluates cup quality in their own lab and prepares the coffee for export to the international market.
