Sourcing Details The location where a coffee is cultivated is often the defining characteristic.

This is certainly true for coffee grown in the region that surrounds Antigua, Guatemala. But contrary to what might be summed up with a location, there are many nuances to this Bourbon lot from the Antigua region, which was cultivated by Luis Sagché on his 37 acre farm called el Destello. Partnership is one of the keys to Luis’ success.

Luis gives his full attention to farm management and selective picking and then transports his harvest to San Miguel Coffee, which has all of the tools to expertly manage the entire post harvest details. Processing Details At the San Miguel mill this bourbon lot was sorted, depulped, fermented for 36 hours, washed and dried on raised beds. San Miguel also uses its own dry-mill where dried parchment is dehulled and sorted with equipment typical in most dry mills, such as gravity beds, screens and an electronic color sorter. The result of this model of collaborative effort, between farmer and vertically integrated exporter produces a traceable single producer lot with a vibrant and clean regional profile.
