Looking to support women in coffee? Ivonne Herrera has dedicated Finca Mirador del Volcán, a 170 acre family estate located in Los Pocitos near the community of San Vicente Pacaya, to supporting 100 employees of which most are women. When Ivonne purchased the estate in 2019 it had largely been abandoned and the neglect had taken its toll. Ivonne and her growing crew have spent the last several years on renovation and recovering from damage caused by Volcan Pacaya’s 2021 eruption. The focus on renovation is starting to pay off and this lot highlights the results from years of hard work and dedication at the farm level.
Processing Details
During the harvest, Ivonne and her team work hard on selective picking practices and sorting cherries. Selected lots of cherry are taken to a nearby wet-mill, which gives Ivonne access to state-of-the-art processing equipment and experienced cupping analyses, which allows her to remain focused on investments at the estate. At the mill cherries are floated to remove damaged and underdeveloped coffee seeds. Next the coffee is depulped and fermented and then washed. After washing, the coffee is gently dried using a combination of patios and raised beds. The coffee is stored in dried parchment until it is time to be prepared for export.
