Honduras has some well-known regions for coffee cultivation, and Agalta is not one of them. But if you are looking to take the road less traveled and also get a coffee that matches up with some of the best Honduras has to offer, get some of this coffee. From the capital of Honduras (Tegucigalpa) you have to go north for this coffee, but not too far because Las Chumecas, the name of the 125-acre farm where this lot was cultivated, is still in the department of Francisco Morazan, which is also the department where Tegucigalpa is located. The husband-and-wife team, Pedro José Aguilar and Yesenia Aguilar, who own and manage the farm have recently invested in a milling facility that has taken them from farmers to producers and exporters. That means they are no longer selling coffee in cherry to the local middleman because they can process their own coffee. This lot was depulped, fermented, washed and dried at the new mill. The Aguilar’s also have their own dry mill to prepare coffee for export, giving them total control of the quality of their coffee from farm management to export.
