Sourcing Details
Arrivals from the traditional Eje Cafetero are always a special treat and even more so when they are fully traceable to a particular family farm. Elmer Restrepo produced this micro-lot on his 75 acre farm called El Renacer in the municipality of Villamaria, in the department of Caldas. Elmer has taken a great deal of care in developing proprietary fermentation protocols, exploring new varieties, and approaching coffee through a holistic lens that integrates soil health, climate, microbiology, and agronomy.
Processing Details
Post harvest activities are carried out at El Renacer, which has its own micro-mill where cherries are meticulously sorted, depulped, fermented, washed, and mechanically dried on raised beds and horizontal dryers called guardiolas to finigh the drying process.
Exporting Details
Elmer partners with an exporting company called Sequoias, which operates a dry mill dedicated to the preparation of specialty coffee micro-lots and has years of experience bringing traceable individual farmer micro-lots to the international market. Sequoias is based near Elmer’s farm in the town of Chinchiná, which shortens long supply chain challenges and gives Elmer access to fast feedback on the quality of his exported coffee.
