This lot is packed with a vibrant regional profile and exceptional traceability to 4 family-owned farms located in the Copan department of western Honduras. El Azaharillo is a 25 acre farm owned by Gumercindo Rodriguez. Finca Santa Rosita is a 12 acre farm owned by Juan Jesus Gutierrez. El Tambora is a 34 acre farm owned by Jose Ramon Bueso. And La Montañita is a 17 acre farm owned by Napoleon Mejia. Each producer has their own micro-mill where they carefully harvest cherries, depulp, ferment, wash and gently dry the parchment. The harmony between these producers in post-harvest practices is a critical step to achieve a clean and consistent blend. But also just enough differences from farm to farm to create a rich complexity of flavors.
