Coffee Background

Guatemala Antigua Bella Carmona Hunapu is sourced from 350 family-owned farms and Luis Pedro Zelaya Zamora. Luis Pedro has partnered with farmers from Hunapu, the indigenous name for Volcán de Agua (Water Volcano), which is located in Antigua Guatemala. Coffee produced in the Antigua region has a protected designation of origin (PDO) because of Antigua’s renowned coffee reputation. Luis Pedro is a fourth-generation coffee farmer and agronomist who has a proven ability to bring tradition and innovation together. He provides the Hunapu coffee producers with technical assistance such as nutrition, tissue, and pest management at their farms. As a result, producers are able to deliver improved selections of coffee cherries to the Bella Vista wet and dry mill where Luis Pedro’s team meticulously processes fully traceable lots tracked by harvest date, location, variety, and altitude. Coffee is depulped, fermented, washed, and dried on patios and in solar dryers. These solar dryers allow for the coffee to gradually dry in a controlled environment, which improves cup quality. Raised tables provide improved airflow permitting a more uniform drying process and the raised tables also allow better access for hand sorting parchment as it dries.
