Background Details

Ethiopia Yirgacheffe Chelba is sourced from approximately 700 family owned farms organized around the Chelba mill located within the coffee region of Yirgacheffe in the Gedeo Zone, Southern Nations, Nationalities and Peoples' Region, Ethiopia. Ripe cherries are carefully sorted and pulped immediately at the Chelba mill and then fermented in water for up to two days to remove the mucilage. After the fermentation stage, the coffee is washed in long troughs with pristine mountain water from the Chelba River and then sun dried on raised beds for eight to ten days, depending on the weather.
