Coffee Background

Costa Rica is one of those easily accessible destinations many coffee lovers know firsthand. But as a coffee producing country there have been many pressure points shrinking production despite some of the most innovative adaptations seen anywhere in the coffeelands. Asoproaaa is an association of 1200 members working to preserve the rich culture of coffee production in Costa Rica. Asoproaaa sources coffee exclusively from 10 farms and focuses on mirco-lots. This particular lot was harvested from La Finca Valverde Abarca, a 5 acre farm in Tarbaca. When the owner Carlos Valverde recently passed away, Asoproaaa stepped in and purchased the farm from the family and has continued the tradition of producing coffee. The farm also produces lemons, oranges and mandarins. A small crew of 10 people harvests the coffee to ensure selective picking. After the cherry is harvested, it is hand sorted and laid out on patios located at the farm where it is dried to 11 percent moisture. Then the coffee is sealed in airtight bags and moved to the Asoproaaa warehouse until it is time to mill and export.
