El Salvador Finca El Guarumal Black Honey Caturra GrainPro is sourced from INVERFINCA, a family owned operation located near La Pandeadura, a town in the municipality of Tacuba within the department of Ahuachapan, El Salvador. The coffee is cultivated, harvested and processed by INVERFINCA founders, Fernando Alfaro and Jose Enrique Gutierrez, who both have a long family history with coffee production and processing in El Salvador. INVERFINCA meticulously sorts and depulps ripe cherries and then dries the parchment, still covered in mucilage, on raised drying beds in thin layers. The parchment is turned every 2 to 3 hours during the first few days and then it is transferred to clay patios and constantly raked to ensure even drying.
