Coffee Culture in El Salvador

El Salvador is a country in renaissance when it comes to coffee. The civil war has been over for nearly three decades and subsequent decades of violence has begun to wane.  Leaf rust is ever present but renovation strategies have curbed the crisis.  Almost everybody in El Salvador with a coffee farm possesses an expertise drawn from three or four generations.  There are simply no limits to the ways this generation of El Salvadoran producers have embraced the specialty coffee market with the duality of tradition and innovation.

Supplier Details

The best of the best often come to the top because of the prestige of the mill where the coffee is prepared for export.  This is certainly the case for Beneficio El Carmen where coffee is expertly processed in any number of ways and gently dried on clay patios or raised beds.  Fernando Alfaro, the fourth generation to run the family’s mill, works tirelessly with coffee coming from many estates.  A combination of experience and a state-of-the-art cupping lab are used to make decisions about how to bring out the best in each coffee.

Farm Details

This is exactly the case with this naturally processed Castillo, Icatu and Marselleza lot from a 37-acre estate called Los Amates, which is located near the town of Concepcion de Ataco in the Ilamatepec mountain range within the department of Ahuachapan. Through years of experience, Los Amates’ owner, Roxana de Tobar, knows her coffee responds exceptionally well to being processed naturally and the method also saves a tremendous amount of water resources, which is good for the environment.  Roxana relies on 15 full time employees who are dedicated to meticulous farm management throughout the year.  

Processing Details
During the harvest a great deal of care and focus is dedicated to picking and delivering the best quality of cherries to Beneficio El Carmen where it is placed on raised beds and turned regularly for more than 20 days to ensure even drying.  After drying is completed, the coffee is carefully stored at El Carmen and later milled and sorted at El Carmen with equipment specifically designed to to manage traceability and quality for every micro-lot.
