This course takes place over two consecutive days:
Tuesday, July 9th, 9:30am – 4:30pm (lunch provided)
Wednesday, July 10th, 9:30am – 12:30pm
Advanced Roasting at The Crown is a course that allows the experienced roaster to gain further confidence in the roast process by exploring the theory behind acid development in the roaster. Over 1 1/2 days, you will explore how to consider stages of the roast process and manipulation of their ratios to fully express the desired attributes of a coffee to suit the needs of your business and the palates of your customers.
We will explore how to profile a coffee for production from a given set of sample roast profiles. We will also discuss different attributes of green coffee to help you understand how to roast for your specific green coffee selection. In order to set you up for success, there will be tips regarding questions you should ask your importer in order to ensure you are buying the appropriate coffees for your business needs.
About the Instructor
Candice Madison, Director of Roasting, Royal Coffee, Inc.:
Candice Madison has worked in specialty coffee for nearly 10 years. An accomplished barista, roaster and trainer, she is a Q Arabica Instructor and SCA AST. Candice teaches at The Crown: Royal Coffee Lab & Tasting Room, as well as at Global Expo and Roasters’ Guild Retreat events. She is currently the Director of Roasting at The Crown where she is working to build and implement a comprehensive multi-level roasting course offering. She is a member of the SCA Equity Diversity and Inclusion Task Force and her vocation is the unceasing quest for quality of coffee, and sustainable improvement of the lives of those who produce it, at every stage of the supply chain through education and purposeful engagement.
