35874 – Costa Rica RFA La Pastora Tarrazú comes to us from the CoopeTarrazú cooperative in the heart of Costa Rica’s most famous and densely planted coffee growing region. The cooperative was founded in 1960 and is now firmly established as one of San Marcos de Tarrazú’s largest employers. Over 3200 members belong to this not-for-profit Fair Trade and Rainforest Alliance certified organization. This is a classic Tarrazú in a lot of ways: it’s a high grown coffee with very high density and clean straightforward flavors like chocolate and plum with a buttery body and balanced but tangy citric acidity. 

This high density of 35874 – Costa Rica RFA La Pastora Tarrazú performed well with a high charge temperature and increasing the heat just after the turning point. At this light roast, this coffee displayed a sweet orange blossom accompanied by sweet dark plums and vanilla. Taking this roast further will bring out more jammy and juicy flavors.
