36195H – Sumatra FTO Takengon Ketiara comes to us from the same cooperative we focused on last week in our Crown Analysis: 36283 – Sumatra Organic Adsenia Triple Picked. The cooperative is located in the Takengon highlands in Aceh province and boasts a membership of over 2000. Aside from coffee milling and processing, additional services the Ketiara Cooperative offers include financial assistance for farmers and reinvesting fair trade premiums in schools, hospitals, and farming equipment. A women’s organization was recently formed in the wake of regional conflict and recent earthquakes to address the needs of the community, which includes plans to build a health center. 36195H – Sumatra FTO Takengon Ketiara has a classic peaty Sumatra profile with a very full chocolaty body and hints of fruit leather and aromatic pipe tobacco. Note the nice moisture readings on the green coffee specs, below, which adds stability to this spot Houston offering.

Extending the roast time of the 36195H – Sumatra FTO Takengon Ketiara brought out a lot of sweetness in the roast and preserved some mild fruit flavors. The profile below had a rounded mouthfeel of chocolate and marzipan made this a very appealing cup on the table. For more earth flavors a shorter and more aggressive heat application did the trick.
