Huila’s geographical accessibility, dense population of knowledgeable farmers, warm and subtropical forests, high elevations, and microclimate diversity have for many years sustained one of specialty coffee’s most beloved regions. The fact that most of the department is harvesting coffee almost every month of the year means that fresh coffee is always available.\u0026lt;\/span\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;Huila is a long and narrow valley that follows a winding gap between two large cordilleras of the Andes. Colombia’s 950-mile long Magdalena river has its source in southern Huila and has shaped the agriculture here for centuries. Uphill from the valley’s lush and picturesque lower slopes are a diverse array of coffee producing communities, often dramatically steep, and each with their own unique climate and history.\u0026lt;\/span\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;b\u0026gt;\u0026lt;span\u0026gt;Finca La Terraza \u0026lt;\/span\u0026gt;\u0026lt;\/b\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;Terraza is the name for the farm owned and managed by Juliana Guevara and Wbeimar Lasso, the duo behind the processor group Terra Coffee. The farm is very passionately run (with a delightful and educational Instagram account no less, @Fincalaterraza). Finca La Terraza resembles countless farms in this part of Colombia, being only a few hectares in size and in a very specific microclimate that encourages coffee trees to fruit nearly the full calendar year—requiring constant monitoring and harvesting in small quantities. This is the second time we have featured their washed gesha as a Crown Jewel. \u0026lt;\/span\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;Wbeimar Lasso, a Colombian Cup Tasters Champion, agro-industrial engineer and third generation coffee producer, is also a bit of a tinkerer with processing. He has become notorious at Royal for multi-fermentation stages coordinated across small farms in Huila, delivering us some of our most unique and interesting coffees from this area.\u0026lt;\/span\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;La Terraza has a number of separated varieties, including pacamara, yellow Colombia, and gesha. The farm’s elevation means a cool climate with particularly frigid nights, which retards everything in coffee production that is temperature dependent, including the maturation of cherry on the tree, fermentation, and the drying of parchment. Indeed, this lot took 25 full days to dry on raised beds. \u0026lt;\/span\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;b\u0026gt;\u0026lt;span\u0026gt;A Washed...Honey?\u0026lt;\/span\u0026gt;\u0026lt;\/b\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;The gesha selected for this microlot was carefully hand-picked and sorted for ripeness and consistency beyond the typical high standards of the farm, allowing only for top quality cherry and highest sugar levels to enter the lot.\u0026lt;\/span\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;Unlike honey processing as we know it, this coffee was depulped and then fermented in plastic tanks for 48 hours. When complete, the mucilage was broken down but not fully, and it was not rinsed or scrubbed away from the parchment like a washed coffee would have it. Instead, the parchment, and all its fermented mucilage, were moved together to the family’s solar drier, where it was spread in a very thin layer to avoid any contamination from fungus, mold, or bacteria (at this point the mucilage is so voluminous, wet, and warm, that the risk is high and needs to be avoided with precise technique). After the first 5 days of drying the mucilage coffee has shed much of its outer moisture and can then be safely piled much thicker; doing slow retards drying and allows for a much longer, slower period of evaporation and moisture equilibration. The total drying time is 25 days.\u0026lt;\/span\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;Once complete, the whole lot is moved into a storage facility. From there, the Terraza team withdraws a sample, which is allowed to rest for 15-20 days before roasting and cupping, to help the coffee shed some of its edgy flavors and better represent a rested offer sample to Royal.\u0026lt;\/span\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;b\u0026gt;\u0026lt;span\u0026gt;Terra Coffee SAS – Beyong La Terraza\u0026lt;\/span\u0026gt;\u0026lt;\/b\u0026gt;\u0026lt;span\u0026gt; \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;Terra Coffee SAS is a local producer group, established in 2016 by Wbeimar and Juliana, with a narrow focus on developing high quality coffees alongside select producers in the Huila and Nariño departments, and sharing them with the world. Driving their business model is an understanding that quality results from small harvests have direct impacts on not just the farm owner, but the many dependents on each small farm, including young children, older adults, and the women of the household performing essential labor that often goes unpaid. It contains the city of Sanaa, Yemen’s national capital. Coffee-growing families in this part of Yemen, similar to many others across the country, tend parcels of terraced land passed through many generations. Coffee is the one crop that continues to survive all others, both for the livelihood it provides as well as a being a deep social tradition that keeps communities together. “Sanani” is a term of terroir distinction, similar to “Kona”, that refers to high-quality heirloom coffee varieties produced in the unique climate and soil of this particular area. Sanani coffee is widely regarded in Yemen as one of its best regional blends and is considered to be one of the most balanced. All Sanani coffee, as traditionally everywhere in Yemen, is processed as a natural: hand-picked, sorted for consistency, and dried in a single layer in full sun on raised beds or rooftops. Due to the arid climate and slow maturation patterns, coffee is picked almost year round. Mbilima is one of these stations.\u003cbr\u003e\n\u003cbr\u003e\nMbilima was established by Dukunde Kawa in 2005 to give farmers in this area a shorter commute to deliver cherry during harvest (Ruli, the coop’s other nearest station, made for a long journey for many and the quality of cherry suffered as a result). Thanks to a mineral-rich soil and lush environment, the washing station and its contributing farmers successfully achieved organic certification in 2015. This is one of the highest elevations that Dukunde Kawa serves, with farms passing 2100 meters. Mbilima itself sits at 2020 meters, making it one of the highest washing stations in the country. Because of the high elevation and local climate, harvest here progresses slowly and members annually pick coffee into the month of October, multiple months past the majority of the country.\u003cbr\u003e\n\u003cbr\u003e\nProcessing at Mbilima includes cherry sorting by the farmers themselves upon delivery. The cherry is then floated in a large receiving bay to identify and remove floaters (low-density cherry which is processed separately). Cherry is then depulped and the fresh parchment is graded immediately by flotation in a short channel. Fermentation usually lasts 18 hours and is completed without water. Once the dry fermentation is complete the parchment is soaked in fresh water between 18-24 hours to halt fermentation and the stabilize moisture content of the batch. After the soak the parchment is washed once again, this time in grading channels—long shallow concrete channels with water flowing through—which allows the parchment to naturally separate by density. From here, each separate density grade is moved to pre-drying tables to be hand-sorted for imperfections and gently dried to the touch. After the hand-sort is complete, the parchment is then moved to fully-exposed drying tables to finish drying, a process that takes between 14-21 days depending on the climate.\u003cbr\u003e\n\u003cbr\u003e\nDespite its diminutive size compared to other East Africa coffee producing countries, Rwanda’s coffee has an important history and terroir entirely unique to the rest of the continent. Coffee was originally forced upon remote communities by the Belgians as a colony-funding cash crop. The Belgians distributed varieties cultivated by the French on Ile de Bourbon (now Reunion Island, near Madagascar) but had so little invested in coffee’s success that they immediately allowed production to decline through lack of investment in national infrastructure, as well as the farmers who grew it. As a result, the sector suffered near total obscurity in the coffee world from Rwanda’s independence in 1962 until the period of rebuilding following the country’s devastating civil war and astonishingly tragic genocide in 1994.\u003cbr\u003e\n\u003cbr\u003e\nRwanda’s former cash crop, however, roared to international buyer attention in the late 2000’s thanks to one of East Africa’s most successful coffee interventions, the Partnership for Enhancing Agriculture in Rwanda Through Linkages (PEARL). PEARL was a sweeping infrastructure and education investment targeting large regions of Rwanda whose coffee was for the most part processed poorly at home and exported with little traceability. The program, designed and led by the University of Michigan, Texas A\u0026amp;M and a host of Rwandan organizations, vastly increased processing hygiene by building washing stations. It also organized remote and under-resourced smallholders into cooperative businesses capable of specialty partnerships. Perhaps most significantly for the long term, it took the legacy bourbon genetics buried in abandon and polished them anew to the amazement of coffee drinkers everywhere. The snappy acidity, stone fruit flavors, and fragrant herbaceousness found in Rwanda’s coffee is still completely unique to bourbon produced anywhere else in the entire world. The Ermera municipality is one of the island’s highest in elevation and includes its highest peak, Tatamailau. The villages in the mountain’s vicinity are where Café Brisa Serena (CBS), a social enterprise and exporter, has spent the last 10 years developing smallholder coffee value chains.\u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;This coffee is produced by 10 select farmers from the Ducurai village, whose group is called “Lebudu Kraik”, which translates to “lower wetlands” and comes from their particular location on the mountainside. The Ducurai village is just north of Tatamailau’s peak and Lebudu Kraik is one group in a small portfolio we import each year from CBS, who began by training remote smallholders in farm management and processing, and who is now a highly capable exporter with some of the best smallholder traceability in the world. Each year we receive a spreadsheet with farmer names and farm data, as well as parchment prices paid. This harvest Lebudu Kraik group farmers received $3.50 per kilogram of dried parchment, which after final dry milling is roughly equivalent to $2.27 per pound of exportable green coffee.\u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;Coffee in Letefoho is not young. Trees are tended to for decades, and due to the lofty, vine-like typica varieties throughout, coffee is often harvested by leaning long wooden ramps against the trunk so that pickers can access the sprawling canopy. Farms range between 0.5 and 1.5 hectares only and tend to be well-shaded by evergreen she-oaks, a natural mulcher and nitrogen fixer. During harvest coffee is picked painstakingly by hand and processed at home on personal or shared pulping equipment, which is often hand-made using wood and textured metal discs. \u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;After fermenting in small personal containers, the coffee is dried on raised beds and constantly sorted for quality. Many of the current harvesting and processing standards come directly from CBS, who has helped establish specialty protocols and invested in improvements to processing equipment. The addition of drying structures, for example, has greatly improved farmers’ ability to consistently meet quality standards for moisture content and water activity. In addition to coffee, Ducurai farmers also manage personal crops of taro and cassava, as well as pigs, goats, fowl, and cows, and many also have personal compost programs in addition to being organic certified.\u0026lt;\/span\u0026gt;\u003cbr\u003e\n\u003cbr\u003e\n\u0026lt;span\u0026gt;Café Brisa Serena works with over 400 farmers in the Letefoho area. The organization was formed in close collaboration with Peace Winds Japan, a Japanese NGO that had been working in Timor-Leste’s coffee lands during the first decade after independence, when violence and crumbled infrastructure had disenfranchised many remote coffee communities. CBS continued the development work of Peace Winds, and in 2015 began a formalized specialty export chain. Notably, processing is typically not overseen by a single individual or team; instead, coffee moves task by task through different parties before reaching its final, fully-dried, state.  Coffee farms in Aceh average 0.5-2 hectares each (even smaller for this group, where farms range from 0.5-1 hectares). Every village with cooperative members has a collector (or more) who receives fresh-picked cherry for washed processing each day, depulping the coffee at their home. \u0026lt;\/span\u0026gt;\u0026lt;span\u0026gt; Once a batch of coffee has been depulped, fermented overnight, washed clean, and then sun-dried to the touch, each collector then delivers the batch to the cooperative’s central mill.  Here the coffee is mechanically hulled of its parchment, leaving behind just the soft, high-moisture coffee bean (thus earning the term “wet-hulled”), all of which is spread out on large patios to continue drying, from 40% moisture down to about 18%.
