Background Details

The cooperatives we buy from in the far south of Yirgacheffe like Banko Gotiti and Worka, have for years produced a large volume of Grade 4 coffee in addition to the higher end Grade 3’s we typically buy. Most of this coffee has been sold at the ECX to large exporters who send it on to large commercial roasters and institutional concerns. This is typically not great for quality. In 2015, for the first time, the Yirgacheffe Union will operate their own private dry milling facility. This will allow for much higher milling standards to be achieved than what normally passes for Grade 4 from the various Unions. All of the coffee comes from a specific small group of cooperatives in the Gedeb region, and is certified Organic and Fair Trade.
